Elo formula, originally devised for Chess, can and originally did adopt the normal distribution. However, the logistic distribution is now almost always used. It is quite similar to normal distribution but the tails are considerably shorter. In my opinion it is mathematically more elegant. Fundamentally it is based on the following premise:
If there are three players, A, B and C, and we know that the odds of B beating A are 1 to X, and the odds of C beating B are 1 to Y, then it may be assumed that:
the odds of C beating A are 1 to X*Y
this leads to a fairly straightforward formula, as can be seen in the help pages of XG and other sources.
To calculate probabilities for best out of 5, I simply looked at the various permutations were one side won 3 from 5 matches and assigning the two probabilities for a single match win and match loss. I think this is equivalent to a binomial type distribution.
