When defending (you being the player with the low pipcount), don't try to rush your men round to the bearoff too quickly. If you can't comfortably make a *really* good inner board point (eg 5point), then concentrate on building an outside prime (your 11point to 5point region) to make your opponent either crunch his board or lose one of his rear anchors, and don't be too concerned about maintaining an anchor in his innner board so much because he won't have the ammo to blitz you. You can more easily leave blots in your outer board in an attempt to make the outside prime, and recycle them if they get hit, with much less risk than normal. You want to try to avoid having to bearoff against a double anchor whilst he still has some sort of board intact, because that is his main winning chance. There are various other subtleties involved, but that's the basic gist of it.
