Would putting one's fingers on the board to remember the count be using an improper mechanical aid in violation of the rules?

I wouldn't think so. People often touch the board when counting the position. Checkers too, to unstack them. As long as you don't do anything that obscures opponent's view or is unduly distracting.

Similarly, if I moved my coffee cup, camera, pencil and scoresheet to particular positions to record the count, wouldn't that also be a violation?

Under a strict reading of the rules, these would be a violation. Coffee cup and camera are not part of the standard equipment. The pencil and scoresheet are for recording the score at the end of the game. You probably shouldn't use these things as an aid in counting. Even the dice probably shouldn't be used this way.
